What is the best option for connecting - preferably from Glasgow? Via Heathrow, or via Paris?

The latter is going to be much more expensive than two low cost legs combined with a one way train journey. Remember that the TGV in France really shrinks the distance between cities, and the train will also take you direct to the terminal at CDG without having to go through central Paris. The journey takes just over 2hrs, starting from €30.
The terminals have been re-jigged a bit since I last used CDG, when Flybe were in 1, and easyJet in 3. Both are now in Terminal 2, which is the one you want, as the TGV station is right in the middle of the whole complex. It doesn't get easier than that!
However, Flybe's Paris flights aren't quite what they seem - they will sell you a ticket direct to Edinburgh, but it is operated by Air France. Their Glasgow flights are labelled as direct, but look at the flight time - over 3 1/2 hours! This is because the flights are actually routed via Cardiff, a bit naughty that they don't say that. Otherwise, all Flybe Paris to Glasgow and Edinburgh routings will involve a change somewhere down south - and that defeats the point of taking the train to Paris.

Oddly enough, trying to find flights home from Lyon just over 10 years ago was my reason for setting up Flightmapping.com. If you are using the airport, don't forget to take a look at the stunning TGV station, designed by architect Santiago Calatrava. I ended up flying back to Stansted with Buzz, who were taken over by Ryanair, but the Lyon route was soon dropped.
